Gingerbread Chaffle Recipe
Chaffles are still going strong in our house since the start of the craze because they are just so stinkin easy to make and they taste so good. The many different chaffle recipes make it really easy to keep going and making and creating more chaffles!
I love gingerbread cookies and I wanted an easy way to enjoy the gingerbread flavors in a tasty low carb treat.
What is a Chaffle?
Achaffleis the most amazing creation yet to come out in the keto world.
The consistency that comes from cheese and an egg along witth spice baked in a dash mini waffle maker or a regular sized waffle maker is perfect!
I knew that I could combine the flavors I love, with the ease of making a chaffle and and that it would hit the spot. I had a few not believe me in my house, but then they took one bite of this pumpkin chocolate chip chaffle and changed their minds. A few of them told me it tasted more like a cookie than a waffle. I am totally ok with that!
In a medium bowl add in the mozzarella cheese, almond flour, baking powder, eggs, ginger, cinnamon, nutmeg, cloves, and swerve and mix well.
Add 1/4 of the keto Chaffle mix to the Dish Mini waffle maker at a time. Cook chaffle batter in the waffle maker for 4 minutes.
DO NOT open before the 4 minutes is up. It is VERY important that you do not open the waffle maker before the 4-minute mark. After that, you can open it to check it and make sure it is cooked all the way, but with these chaffles keeping the lid closed the whole time is VERY important.
When the first one is completely done cooking cook the next one.
Enjoy with some swerve confectioners sweetener or keto whipped cream on top.

If your chaffle sticks to your waffle maker leaving behind a big gooey mess, you probably didn't let it cook long enough. To salvage the waffle, close the waffle maker immediately and let it cook longer. It should easily release.
What are chaffles made of? There are only 2 ingredients in this miracle waffle: cheese and eggs. The reason it's called a chaffle is because it's basically a cheese waffle. Cheese + waffle = chaffle.
Chaffles are waffles made with cheese and eggs; its funny name is a combination of the words “cheese” and “waffle”. Without any sweeteners, they taste like your favorite grilled cheese sandwich but with the texture of a crispy, crunchy waffle.
Another option is to keep it in the fridge for up to 5 days. Once you've let the chaffles cool, you can store them in an airtight container in the refrigerator or freezer. To reheat the chaffles place them in the toaster or you can microwave them for 30-60 seconds, or in the oven at 180/350 degrees.
Add a pinch of cheese to the baby dash then pour half of your batter, adding another pinch of cheese. This is a little secret that I swear by to ensure that you get an extra crispy chaffle.
Not waiting until the iron heats up properly means your waffles will cook, but never achieve that satisfyingly crisp exterior. Overworking the batter will leave your waffles dense and chewy instead of light and airy. And stacking even the most perfect waffles will cause them to become soggy and limp in minutes.
It's totally fine and safe to eat up to 6 eggs a day while on the keto diet. You can consume even more eggs per day occasionally, as long as you make sure that you eat your greens, healthy fats and proteins from other sources.
Bananas. Even though banana health benefits abound, like helping to boost heart and immune health, bananas are basically off the table when you're eating keto. Why? One medium banana contains a hefty 27 grams of carbs—eat one, and you're almost at your quota for the day.
FYI: Chaffle recipes that contain only egg and cheese, without any almond or coconut flour, will be a bit less sturdy in the toaster. If they are too floppy for the toaster, you can try the oven instead.
To store: Chaffles can be stored in the refrigerator, covered. They will keep well for up to 5 days. To freeze: Place leftover chaffles in a ziplock bag and store them in the freezer for up to 6 months. Reheating: Simply pop them in a toaster oven or toaster until crispy.
Properly stored, chaffles will last 4-5 days in the refrigerator. To freeze, place cooled chaffles in a freezer bag or airtight container with parchment paper between each one. Frozen chaffles will keep for 3-4 months. Thaw in the refrigerator before reheating in a toaster oven or air fryer.
Toaster – Just like you would toast bread, place the chaffle in and let it toast for 30 seconds or so. Oven/Toaster Oven – Warm oven to 350 degrees F and cook 4-5 minutes. Stovetop – Heat a dry pan to medium and cook 1 minute on each side. Microwave – Not ideal; the chaffles get very soggy.
Below are some causes for waffles sticking to the grids of the waffle maker: Too much oil or a lack of oil. Batter may stick if there is no egg yolk in it; must have egg yolk or oil for non-stick. It is always recommended to spray a non-stick product on the plates.
Even if you have cleaned the waffle iron after every use, surfaces can still become sticky and need a deeper cleaning. Mix a paste of baking soda and a few drops of hydrogen peroxide (it may bubble slightly).
Apply a few drops of cooking oil to any stuck or burnt batter to soften it enough to remove. You can also try applying a hot towel to the waffle machine's surface to soften stubborn residue. Another popular waffle-maker cleaning hack: creating a paste with baking soda and water.
