Low Carb Snack Bars to snack away those cravings. These Keto Friendly Snack Bars are one of our favorite recipes to make ahead of time to enjoy throughout the week. These are easy to grab-n-go and really do fill you up. Did I mention they’re yummy?
I wanted to take a crack at making some grab-n-go, low carb snack bars. To be honest, I didn’t expect much from my first batch. But they actually turned out pretty well!
You can easily enjoy these without the chocolate coating, as they are pretty good on their own. Simple flavors that aren’t overly sweet, but sweet enough to enjoy them.
That being said, if I were to make these again, I don’t think I would coat them completely in the chocolate. Maybe just spoon a top layer on instead of doing the whole thing. Less work, less time and effort, and still really tasty.
Recipe note that if you do want to proceed with coating the bars completely with chocolate, you will want to double the topping recipe below.
We ended up using our low carb baking mix to complete these snack bars. I would call them a mix between a treat and granola-ish bar. I actually would say these are definitely bit more of a snack bar then a snack bite like our Snickerdoodle Protein Balls. These snack bars satisfy me but at the same time actually make me feel full whereas I don’t get that feeling with Fat Bombs.. these would do even fantastic for breakfast honestly without the chocolate coating…. or with a bit of chocolate. 😉
HOW MANY NET CARBS IN A Low Carb Snack Bars?Â
3 Net Carbs per snack bar when making into 16 bars. We mention the type of silicone pan you may use or using a casserole dish and slicing yourself so size and amount made may vary.

Ingredients
Snack Bars Base
- 2 tbsp. coconut oil
- 3/4 cup creamy almond butter no sugar added
- 3/4 cup unsweetened almond milk plain or vanilla
- 2 cup low carb baking mix
- 1 large whole egg
- 1/2 tsp. baking soda
- 1/2 cup chopped walnuts
- 2 tsp. vanilla extract
- 1 tsp. pure liquid stevia
- 2 tbsp. erythritol
Chocolate Topping
- 4 oz. unsweetened baking chocolate
- 1/4 cup coconut oil
- 1 tsp. pure liquid stevia
- 1/4 cup powdered erythritol (just blend some in a blender to powder it)
- 1/8 tsp. sea salt
- 1 tsp. pure vanilla extract
Garnish
- 1/2 cup slivered almonds
Instructions
Mix the bar ingredients together in a mixing bowl. When it's done, it will be the consistency and feel of a medium-wet cookie dough. It should hold it's form but be slightly sticky.
Press the dough into a snack bar baking pan (see samples below) and bake at 350 F. for 30 minutes.
Cool and remove from pan.
While the bars are baking, melt the chocolate in the microwave. First for 1 minute, and then for 30 second intervals until the chocolate is melted. Stir every time the microwave stops so you don't burn the chocolate.

Spoon the chocolate over the bars, top with the almond if desired and freeze for about 30 minutes to set the chocolate.
Store in the refrigerator.
